BREAKFAST TORTILLAS
I've been on a bit of a health kick recently, and breakfast for me is the best meal of the day, i just can't function without it. I saw this recipe on youtube and just had to try it out as it had a lot of ingredients i love included, and it seemed quick and easy to do. Everybody that knows me will agree that I'm not a natural chef by any stretch, but my one of my aims for this year is to start cooking more and this seemed a good place to start.
Ingredients:
Tortillas
2 eggs
Spinach
Tomatoes
Oil
Pumpkin seeds (or any seeds you have)
Sweet chilli sauce (optional)
How to:
Start off by chopping the tomatoes and then whisking together the two eggs in a bowl. Add a small amount of oil to a frying pan and add the egg mixture. Leave for a minute or so before adding the spinach. You'll need quite a lot as it wilts down (something i found out in the process of cooking this) stir together the eggs and spinach with a wooden spoon, and add the chopped tomatoes and seeds. While this is cooking heat up the tortillas. I did this by microwaving them but some people like to fry or toast them so it's up to you! Once everything is cooked, spoon your eggs and spinach on to a tortilla and add your sweet chilli sauce. Obviously this is to taste, and I love sweet chilli so that was an obvious choice to me, but anything goes here! Then the last thing to do is roll the tortillas, which is always a tricky task, especially to a self-confessed cook-a-phobe like me.
So there you go! I always think its good to experiment and try different things, especially with breakfast. It was so quick and easy, pretty much mess free and so healthy and filling.This may not be to everybody's taste but I loved it!
