One of the reasons why I think street food could be a trend that's here to stay is because people's lives are getting busier and busier. Most places are open 7 days a week, so everybody is always rushing around trying to get from one place to another. For people that work 9-5, the weekend needs to be savoured so therefore less time is spent on food, hence why people get takeaways. It's the same effect with street food, as it's all there for you immediately, and you just eat it out of a box as you walk around rather than sit down.
